In my highly unprofessional opinion, the quality of a brunch establishment is based on the Chicken and Waffles and Bloody Mary served. Chicken and Waffles Recipe

Part I: Waffles Recipe:

Ingredients:

πŸ§‡ 2 cups all-purpose, unbleached flour.

πŸ§‡ 3 teaspoons baking powder

πŸ§‡ 2 teaspoons salt

πŸ§‡ 4 eggs

πŸ§‡8 tablespoons melted butter

πŸ§‡ 2 teaspoons vanilla extract  (plus the extra you β€œaccidentally” splashed in.)

πŸ§‡ 1 teaspoon almond extract

Instructions:

  1. Mix Dry Ingredients: In a medium bowl, whisk together the flour, sugar, baking powder, and salt.
  2. Mix Wet Ingredients: In another medium bowl or your stand mixer bowl, combine the eggs, milk, vanilla extract, and almond extract using the whisk attachment. Once mixed, add the sourdough starter or baking soda and combine.
  3. Combine Wet and Dry: Gradually add the dry ingredients to the wet mixture, followed by the melted butter. Adjust the batter consistency as neededβ€”more flour for thicker waffles and more milk for thinner waffles.
  4. Cook: Preheat your waffle iron and cook according to the manufacturer’s instructions.

Part II: Chicken Recipe

Ingredients:

πŸ— 7-8 chicken breasts

πŸ—2 eggs

πŸ—1/2 cup oat milk

πŸ—1 cups flour

πŸ—1 cup (100 grams) shredded parmesan cheese (or whatever cheese you have on hand to use up!)

πŸ—1 tablespoon Lawry’s Seasoned Salt

πŸ— Butter or ghee for frying

Instructions:

  1. Prepare Coating: In a medium bowl, mix the flour, cheese, and seasoned salt.
  2. Prepare Egg Wash: In a separate bowl, whisk together the eggs and milk.
  3. Heat the Pan: Place a skillet over medium heat and add butter or ghee. Let it heat up.
  4. Coat the Chicken: Dip each chicken breast in the egg wash, then coat with the flour mixture. Place the chicken in the heated skillet.
  5. Cook: Fry the chicken until it reaches an internal temperature of 160Β°F, approximately 6 minutes per side. Add more butter or ghee as needed.
