Brunch holds a very high place in my heart, as it should for any God-fearing person. In my highly unprofessional opinion, the quality of a brunch establishment is based on the Chicken and Waffles and Bloody Mary served. This Chicken and Waffles recipe is your ticket to the best brunch recipe. Enjoy your homemade brunchβthe bloody Mary is sold separately.
Part I: Waffles Recipe:
Ingredients:
π§ 2 cups all-purpose, unbleached flour.
π§ 4 tablespoons organic sugar
π§ 3 teaspoons baking powder
π§ 2 teaspoons salt
π§ 4 eggs
π§ 1 cup oat milk (or whatever milk you like.)
π§ ΒΌ teaspoon baking soda
π§8 tablespoons melted butter
π§ 2 teaspoons vanilla extract (plus the extra you βaccidentallyβ splashed in.)
π§ 1 teaspoon almond extract
Instructions:
- Mix Dry Ingredients: In a medium bowl, whisk together the flour, sugar, baking powder, and salt.
- Mix Wet Ingredients: In another medium bowl or your stand mixer bowl, combine the eggs, milk, vanilla extract, and almond extract using the whisk attachment. Once mixed, add the sourdough starter or baking soda and combine.
- Combine Wet and Dry: Gradually add the dry ingredients to the wet mixture, followed by the melted butter. Adjust the batter consistency as neededβmore flour for thicker waffles and more milk for thinner waffles.
- Cook: Preheat your waffle iron and cook according to the manufacturer’s instructions.
Part II: Chicken Recipe
Ingredients:
π 7-8 chicken breasts
π2 eggs
π1/2 cup oat milk
π1 cups flour
π1 cup (100 grams) shredded parmesan cheese (or whatever cheese you have on hand to use up!)
π1 tablespoon Lawry’s Seasoned Salt
π Butter or ghee for frying
Instructions:
- Prepare Coating: In a medium bowl, mix the flour, cheese, and seasoned salt.
- Prepare Egg Wash: In a separate bowl, whisk together the eggs and milk.
- Heat the Pan: Place a skillet over medium heat and add butter or ghee. Let it heat up.
- Coat the Chicken: Dip each chicken breast in the egg wash, then coat with the flour mixture. Place the chicken in the heated skillet.
- Cook: Fry the chicken until it reaches an internal temperature of 160Β°F, approximately 6 minutes per side. Add more butter or ghee as needed.
