The Protein you’ve been looking for. This protein-packed banana bread is the perfect to-go breakfast, post-workout snack, or afternoon treat. Like many of us, I’m always looking for ways to add more protein to my diet but sometimes struggle to find good options. That’s why I love baking this banana bread, slicing it up, and freezing it so I can pull out a slice, toast it, and enjoy a balanced snack packed with protein, carbs, and healthy fats—without any nasty chemicals or refined sugars! This protein banana bread is a great way to fuel your body.

Sourcing Ingredients

Bananas: I love using bananas that are on the verge of going bad to avoid waste. If I’m not quite ready to bake before they’re fully ripe, I peel them, pop them in a ziplock bag, and freeze them until I’m ready. Living in Puerto Rico, I’ve got plenty of bananas to get through!

Protein Banana Bread Recipe

Fold in:

  • 3 eggs. Separated into yolks and whites, you will fold whites into the batter at the end.
  • 1 cup (185 grams) dark chocolate chips (80% cocoa)

Wet Ingredients:

  • 6 (400 grams) mashed bananas
  • 1 cup (230 grams) milk (or nut/grain milk of your choice)
  • ½ cup (90 grams) brown sugar
  • 8 tablespoons melted butter
  • 2 tablespoons (36 grams) maple syrup
  • 1 tablespoon (14 grams) vanilla extract
  • 1 tablespoon (12 grams) apple cider vinegar

Dry Ingredients:

  • 3 cups (400 grams) flour
  • ¼ cup  (30 grams) unflavored casein protein powder (or any unflavored protein powder you have)
  • 1 teaspoon ( 6 grams) baking soda
  • 1 teaspoon (6 grams) salt

Instructions:

  1. Preheat Oven: Preheat your oven to 350°F (175°C) and line two bread pans with butter or avocado oil.
  2. Mix Dry Ingredients: In a medium bowl, whisk together the flour, protein powder, baking soda, and salt.
  3. Whisk Egg Whites: In separate bowls, separate the egg yolks and whites. Whisk the egg whites until fluffy and set aside.
  4. Mix Wet Ingredients: In a large mixing bowl or stand mixer, add the mashed bananas, melted butter, milk, apple cider vinegar, brown sugar, maple syrup, vanilla extract, and egg yolks. Whisk until well combined.

  1. Combine Ingredients: Gradually add ⅓ of the dry ingredients to the wet ingredients, mixing well after each addition until fully incorporated.
  2. Fold in Egg Whites & Chocolate Chips: Using a spatula, gently fold the fluffy egg whites and chocolate chips into the batter.

  1. Bake: Pour the batter evenly into the two prepared bread pans and bake for 40-45 minutes or until a toothpick comes out clean.
  2. Cool: Once baked, remove the bread from the oven and place it on a cooling rack. Allow the bread to cool until the pans are cool enough to handle, then remove the loaves from the pans and let them finish cooling on the rack.
